Small Batch Dumpster Cookies (Butterscotch, Chocolate & Heath)
These are my all time favorite small batch cookies, perfect for when you don't need a ton of cookies. TIP: If you don't have all the varieties chips, you can use 3/4 cup of your favorite cookie add-ins!

RECIPE MAKES 6-12 COOKIES (Depending on size!)
INGREDIENTS:
1/4 cup butter melted
1/4 cup Brown sugar packed
3 tablespoon granulated sugar
1 teaspoon vanilla extract
1 egg
1/4 cup + 2 Tablespoons flour
1/4 teaspoon Baking powder
1/4 teaspoon Baking soda
1/2 teaspoon Salt
1/4 cup Semi-sweet chocolate chips
1/4 cup of Butterscotch Chips
1/4 Heath Bits
OR add 3/4 cup of your favorite cookie add-ins!


INSTRUCTIONS:
Preheat oven to 350°F and prepare a baking sheet with parchment paper.
Melt the butter (it takes about 30 seconds in the microwave) and set aside for a few minutes to cool down.
In a large bowl mix the brown sugar, granulated sugar, vanilla, and the egg. Then mix in the melted butter which has mostly cooled. Mix well until smooth.
Add in the flour, baking powder, baking soda, & then the salt. Mix dough until it's just combined and then add in the chocolate chips, butterscotch chips, and heath bits. Fold them into dough lightly. Do not overmix.
Using a spoon, spoon about a tablespoon or more of the cookie dough onto the parchment paper, leaving about 2 inches in between each cookie. (This recipe makes 6-12 cookies, depending on the size! About 6 large cookies - 12 smaller cookies)
Bake them at 350°F for 11-13 minutes or until they are golden brown on the edges of the cookies. Let the cookies cool on the pan and then move to wire rack.
